Game goulash with roasted Czech potato gnocchi

Cut some venison shoulder into cubes and sauté with some prepared onion. Add a mix of spices (bay leaf, whole black peppercorns and whole allspice), quality red pepper and tomato purée and cook until tender. Remove the meat and thicken the sauce slightly with beurre manié (the sauce should not be too thick). Pass the sauce through a sieve and add root vegetables cut into strips (carrot, celeriac and parsnip). Cook until tender. Season with salt and pepper, garlic, game spices and marjoram and return the meat to the sauce. Serve in a special pot on a wooden board.

Czech potato gnocchi (škubánky): Boil potatoes in their skins and allow to cool. Mash with fine semolina and sautéed bacon and add salt, pepper and egg to make a dough. Shape the dough into gnocchi and fry.
